I vaguely remembered a carrot salad dressing from a restaurant one time… but literally nothing else about it. Happy surprise, I threw a few things in the blender, and POOF! Neon veggie-based dressing!

Ingredients (makes two massive portions or 3-4 moderate ones)
- 2 medium carrots, peeled chopped into a few pieces
- 2 Tablespoons tahini
- 2 Tablespoons apple cider vinegar
- 1-2 Tablespoons water (more or less as needed for desired consistency)
- ½ teaspoon minced garlic
- ¼ teaspoon salt, more to taste
