Quick Conjurations! Lemichurri!

My skill at plant magic only goes as far as cooking them. Trying to create them from dirt, water, and magical energy has always been an unmitigated disaster. Even my most carefully-guided apothecary garden attempts ended, as most of my failures do, with a lot of fire and swearing.  This was the norm for my attempts at planting until a few years ago, when there was a minor parsley-related anomaly…

After numerous failed houseplants and gardens that never produced anything, I was given a set of small (probably charmed) pots, some dirt, some herb seeds, and promises that these plants were warded against bad gardening. In addition to parsley, I had mint, oregano, and dill. I promptly set about killing them, but somehow, despite my best efforts, the parsley survived! Drawing strength from its fallen comrades, it grew really tall! And almost as if to spite all the people who told me I’d never be able to kill mint, the parsley strangled it out! That’s my kind of plant! Not only does it thrive on neglect, but it has a violent streak, to boot!

If you, like me, have been blessed with an overabundance of parsley, this is a great use for it. This simple, bold sauce is a great addition to burrito bowls, wraps, salad dressings or flatbreads! I like this sauce, not just to celebrate the harvesting/pruning of my parsley, but also whenever I want a tangy, bright sauce to liven up my plate! Drizzle some of this on your plate, then pile on the rice/your grain of choice! It’s very easy to make, and adds tons of peppery flavor!

  • 1 clove minced garlic
  • 1-2 Tablespoons cilantro leaves (optional)
  • Salt to taste

2) Put cold on dishes, or refrigerate leftovers for 3-4 days, stir before use if stored.
